My kids happen to like sausages, and in Fall and Winter they like soup as well – so how better to keep them happy on a cold Fall day than Nakkisoppa! Sausages AND Soup! The perfect weekend lunch! Now the recipes I was browsing through say wieners, but for myself I usually have sausages lying around in the freezer, not wieners, so sausage soup it was! This is apparently everyday food in Finland, and it’s a tasty sausage and vegetable comfort food that kids (and their parents) can enjoy.
It’s cheap, it’s filling, it’s easy and it’s tasty as well. Potatoes are the main ingredient together with a few sausages, carrots, onions and soup bouillon for flavor. Now in Finland you can buy freezer packs of frozen mixed root vegetables, but in Canada that’s no really an option, so there’s going to be a bit of lead time here peeling and dicing. I used a parsnip, potatoes, sweet potato and carrots. But you can use pretty much any type of root vegetable. Just peel them and slice and dice (I try and dice into small enough cubes that the kids can eat them easily).
Nakkisoppa – Ingredients
- 4 big potatoes
- 1 big sweet potato
- 1 large parsnip
- 4 carrots
- 2 onions
- some garlic cloves
- 500 grams wieners or sausage
- Beef bouillon (I use stock, but cubes are just as good)
- 1 cube of thyme-basil stock base
- Enough water to cover everything
- A pinch of salt
- A pinch of ground black pepper
- Any other spices you like that would work in salty & savory soup
Nakkisoppa – Preparation
- If you’re using sausages, make sure they’re cooked first (you can cook them while you prepare the root vegetables)
- Peel & cut root vegetables into cubes/slices.
- Boil root vegetables in water and bouillon until they start to soften.
- Add cubed onions and spices.
- Turn off the heat and add the wieners/sausages
- Let the soup stand on low heat until served – don’t cook anymore after the wieners/sausages are added
- Sprinkle some fresh parsley over the top
